The Fats, Oils, and Grease (FOG) program is responsible for preventing the excessive introduction of fats, oils and greases into the sanitary sewer system and the wastewater treatment plants.

It is the duty and responsibility of the City of Yuma Pretreatment Section to prevent the excessive introduction of Fats, Oils, and Greases (FOG) into the sanitary sewer system and the wastewater treatment plants. The accumulation of grease within sanitary sewer lines increases the potential to create sanitary sewer overflows and sewer blockages. Sanitary sewer blockages can cause wastewater to back up into business establishments, or homes and can result in extensive damage.

In order to reduce sewer blockages, food service establishments discharging wastewater that contains grease into the City of Yuma sanitary sewer system must install and maintain a grease removal device, including traps and interceptors. All traps and interceptors shall be maintained for continuous, satisfactory and effective operation by the owner, leaseholder or operator at his expense. Best Management Practices for the control of FOG shall also be implemented by all establishments that discharge FOG to the City wastewater collection system.

The intent of this Program is to ensure compliance with the City of Yuma AZPDES Permit, compliance with the rules and regulations of the United States Environmental Protection Agency, and the Arizona Department of Environmental Quality and to protect the City of Yuma's sanitary sewer system infrastructure.
